Well after my first NPC Bikini Competition and I cant lie I went carb crazy after! Luckily I have an AMAZING coach Sarah Long who has made me a new mini improvement season plan to get my carbohlic ass back on track for my next show in Aug (gotta put lots of size on my upper body!). Carrots is on my plan for breakfast...well what the heck to do you eat for breakfast with carrots! Immediately with carrot shreds I pictured shredded hashbrowns! I googled if anyone has made them before but all recipes called for flour or potatoes, so I had to get creative to to find a way to bind the patties. Xanthan gum gum and eggwhite!
I am only limtited to certian amount of carrots and oils for my specific dietary needs so the recipe is not my specific macro needs because the portion is small for mine i changed it for you guys!
**Mix in a bowl**
3/4 CUP shredded carrots
2tbsp egg whites
1/4 tsp Xanthan gum
chopped onion (to your own taste probably 1tbsp)
chopped jalapeños (to your own taste probably 1tbsp)
garlic powder
onion powder
black pepper
**For cooking**
1tbsp coconut oil (unrefinded will add a coconut taste refined will not)
Heat up a skillet pan on medium heat
Mix all ingredients and then ball pieces up and flatten them in little patties
Add oil to pan
Place carrot patties in pan and fry them for 2 mins then carfully flip, if to soft to flip leave for another min
cook on other side for a couple mins and continue to flip on each side until you reached a desiered texture i like crispy! :)
serve with UNSWEETEND ketchup and hot sauce
Freaked out about fats? You shouldn't be. Well this is a whole other blog post waiting to come but bottom line your body needs fat, good healthy fats! Obviously in the amount your body needs for your specific body goals or needs. Either have a dietitian tell you your needs or go to the iifym link I added to the blog to find out how much of everything your body needs! Y ou could be under eating causing your body to hold everything you take in or over eating causing you to also gain weight!
